One of my favorite soups is bacon and potato soup. Now that I am living keto that is not an option, but this Creamy & Cheesy Bacon (or ham) Cauliflower Soup is a Great Option!! I have served this a a few church socials in the winter time and everyone loves it! Most people do not realize that it is cauliflower until it is gone. Throw this in the crock pot in the morning and have a warm, soothing soup ready for dinner!!
2 12oz. bag of frozen Cauliflower
1 32 oz box of chicken broth
1 Cup Heavy Whipping Cream
1 pkg. cream cheese (8 oz, not fat free)
6 Strips of Bacon Cooked (or 12 slices, or 24 slices or...) You can also use chunks of ham or pork
1 cup shredded cheddar cheese
-Place frozen cauliflower in the crock pot
-Add in the chicken broth, cream of chicken soup and half of the bacon or pork.
-Add a pinch of salt and pepper.
-Cook on low for 8 hours or until cauliflower is tender.
-An hour before serving, cut the cream cheese into small cubes. Place the cubes in the crock pot.
-Mix a few times throughout the hour before serving.
-Once the cream cheese is completely mixed in sprinkle the paprika on top and it is ready
-Top with cheddar cheese and some additional bacon on top of each bowl.
-Serve and Enjoy!
