Many times, I hear people complain about living a Keto, Sugar Free, Grain Free Lifestyle. “I can't have this, or I can't give up that”. Well, all it takes is some creativity in the kitchen. For example, Smoked Cauliflower and Cheese (instead of Macaroni). We have served this several times at various functions and everyone is blown away when they find out there is no pasta in there.
2 bags (12oz bags) of frozen cauliflower
4 Tbsp butter
4 Tbsp coconut flour
1.5 cups heavy cream
1/2 package (4oz) cream cheese, cut into large chunks
2 cups (8 ounces) extra sharp Cheddar cheese, shredded
2 cups (8 ounces) Gouda cheese, shredded
1 cup (4 ounces) Parmesan cheese, shredded
-Cook cauliflower according to package directions.
-In a medium saucepan, melt butter, and whisk flour into the butter. Cook over medium heat for 2 minutes, until sauce is bubbly and thick (coconut flour does not thicken like regular flour). Whisk in heavy cream and bring to a boil. Cook until thickened. Stir in cream cheese until mixture is smooth. Add Select Savory Pepper and your choice of Chipotle Seasoning or Smoked Sweet Paprika.
-In a large bowl, combine 1 cup Cheddar, 1 cup Gouda cheese, Parmesan cheese, Cauliflower, and cream sauce. Spoon mixture into an 11 x 9-1/2-inch aluminum roasting pan coated with nonstick cooking spray. Sprinkle top with remaining Cheddar cheese and Gouda cheese.
-Place in smoker/oven and cook 1 hour at 225 degrees F, until brown, bubbly and delicious.
-You can also cook in crock pot: Low for 3-4 hours or High for 1-2, when top is melted and bubbly it is done.
